Just in time for the holidays, my mama comes through with her recipe. I took this photo in the car as I ate a nice leftover shortbread breakfast!!
Gluten Free Shortbread
1/2 cup brown rice flour
1/2 cup white rice flour
1/2 cup tapioca flour
2 tsp. xanthan gum
1 tsp. vanilla
1/2 c. confectioners sugar
3/4 cup butter (room temperature)
mix all well, press into shortbread pan(s) bake @ 325 degrees for 35 minutes

I have a five year old little girl that can’t consume eggs or any sort of dairy. I have noticed a few alterations in your recipes in the past. I always feel terrible she can’t experience what everyone else can. I have tried recipes suited for her but to my taste never taste extraordinary.Any suggestions? We live in Germany so you can only imagine all the bakeries and goodies staring you in the face day to day.If only I could recreate such recipes designed just for her.
Do you have Earth Balance over there? It’s a pretty good butter sub – it’s hard, because then you’re getting into more processed things. Coconut oil & nut butters can be a good butter/oil replacement, and I like almond milk or hemp milk for milk replacements.

Thank you, I will take a look. I’ve tried vegan Smart Balance, is that at all similar to Earth Balance? My options are very limited but occasionally I can find a substitute. Finding something that acts like an egg with out changing the consistancy is a hard one. Thanks for the direction.

<3 this looks delicious. I'm on a sugar-free/vegan/gluten-free cleanse right now ( I can't even have fruit!!!)- and i made this crazy chocolate coconut cake tonight that somehow fits in with all of those requirements, without tasting like cardboard. Yay.

I love brown rice flour – am lucky that I live near a health food shop with lots of plain little price-per-weight bags of interesting things. Will keep this one in mind for gluten-free friends
